Hi i am trying to make a “large clear glass jar” out of sugar that we boiled and poured into a cylindrical vase. It isnt completely cooled yet but it looks like an amber colored glass. Is the sugar burnt? If so how can I get it to not burn and still have it be at a consistency where i can pour it into the vase?

it is not burnt but boiled down sugar will brown or ‘caramelize’ and if you whipped hot cream with a pinch of salt into the amber you would have homemade caramel
you will KNOW when you burn sugar, it smells something fierce.

It just means you cooked your sugar passed the point you wanted.. Of course once you do this, you need to start over again. I f you want that clear look, I would highly recommend getting a candy thermometer or an instant read digital. I can’t tell you the exact degree, when I make caramel I go by sight not temp.
Some signs that it’s getting close
Large, slow popping bubbles
Small amount into a glass of water~should turn to a hard piece
Remember to take the pan off the heat right BEFORE you think it’s done. The carry over cooking will either finish it or if taken off too late, will overcook it.
